POMPOM APPLE TART
2 cups PomPom cauliflower flour
1/4 teaspoon baking powder
200g chilled butter, chopped
1/4 cup chilled water
2 pink lady apples thinly sliced
1 tablespoon lemon juice
1 tablespoon brown sugar
1/3 cup natural almond meal
1 egg white lightly beaten
1 tablespoon Demerara or caster sugar
Maple syrup and ice cream to serve
Place the flour, baking powder and sugar in the bowl of a food processor and process until just combined. Add the butter and
process until the mixture resembles fine breadcrumbs.
Gradually add the chilled water and process until the mixture comes together in a ball. Turn out the dough and shape into a disc. Wrap and chill in the fridge for 30 minutes.
Place the apple slices in a bowl with the lemon and sugar and toss to combine. Roll out the chilled dough to a rough oval shape approximately 3mm thick.
Spread the almond meal evenly over the dough. Top with the apple slices. Fold the edges of the pastry over the apples. Brush with egg white and sprinkle with sugar and bake for 30 minutes.
